Going Vegan

I never thought I’d go vegan. Meat was just so good and what would I eat? Then all of a sudden my perspective changed. It is an amazing feeling to have my choices align with my values. There have been several resources along the way that helped me commit to being vegan. Here are a few in case you would like to join the club.

It is okay to take steps. I started out pescatarian, then went vegetarian, and finally vegan.

My family is not vegan. To make dinners easier, I keep everything the same except the protein, Each meal has veggies, fruit, grains, legumes, and a protein.

I started out replacing meat with things like impossible burgers and nuggets. I rarely eat them now, but it helped me transition.

Just because you don’t like something now, doesn’t mean you’ll always dislike it. I never liked tofu or beans. Now I have one or the other with each meal and it is amazing.

To make things taste good, you have to layer flavors. Roasting, spices, sauces, pickled foods, etc. Don’t expect to toss everything in a pan and it will all of a sudden taste good.

Bowls can be a great way to start, and based on the seasoning/sauce, can really mix things up.

Thai and Indian food are very vegan friendly (and also really delicious).
